No-Bake “Cheesecake” Bites

A dreamy no-bake dessert made with real ingredients, beautiful pastel layers, and a nourishing twist. These colorful 'cheesecake' bars are made with yogurt and coconut cream instead of traditional cream cheese, making them protein-rich, toddler-friendly, and perfect for holidays or weekday magic.

Ingredients

Crust (for 7x5 base dish):

  • 1 cup almond flour

  • 2 tbsp coconut oil or melted butter

  • 1 tbsp maple syrup

  • ¼ tsp cinnamon

  • Pinch of sea salt

Base Filling (make 4 batches or divide one large batch):

  • ½ cup plain Greek yogurt

  • ¼ cup coconut cream

  • 1 tbsp melted coconut oil

  • 1 tbsp maple syrup

  • 1 tsp vanilla extract

  • Optional: 1 tsp collagen peptides or plain protein powder

Color Options (choose one per bowl):

  • Superfood Powders

  • Food Coloring

  • Raspberry purée, turmeric, blue spirulina, blended blueberries, mashed purple sweet potato (might mess with “cheesecake” texture)

Optional Topping:

  • ¼ cup coconut cream

  • 1 tbsp Greek or coconut yogurt

  • 1 tsp maple syrup

  • Dash of vanilla

Instructions

  1. Prepare the crust: Mix all crust ingredients in a bowl until crumbly. Press firmly into a parchment-lined 7x5 Pyrex dish. Freeze for 10-15 minutes.

  2. Make your filling: In 4 separate bowls, combine filling ingredients. Add a different natural color to each bowl.

  3. Assemble the layers: Pour one colored layer over the crust, smooth it out, and freeze for 15-20 minutes. Repeat for each remaining color.

  4. Final freeze: Once all layers are done, freeze the entire tray for 3+ hours (or overnight).

  5. Optional topping: Whip all topping ingredients and spread or pipe over the frozen bars. Decorate with coconut, sprinkles, or pastel drizzle.

  6. To serve: Lift parchment from the dish, thaw 5-10 minutes, and slice with a warm, clean knife.
