Green Gut Soup

This vibrant soup is loaded with gut-healing veggies, healthy fats from avocado and pumpkin seeds, and soothing herbs for an ultra-nourishing bowl. It’s quick to make, easy on digestion, and naturally supports glowing skin and a balanced gut.

Ingredients (Serves: 2-3)

  • 2 zucchinis, chopped

  • ½ tsp dried oregano

  • ½ tsp dried thyme

  • 1 avocado

  • 2 garlic cloves

  • 2 cups vegetable broth

  • 2 tbsp pumpkin seeds

Instructions

  • Cook the zucchini:
    In a pot, bring the vegetable broth to a boil.
    Add chopped zucchini and simmer for 10 minutes, until tender.

  • Cool slightly:
    Remove from heat and let cool for 5 minutes so it’s safe to blend.

  • Blend it up:
    Pour broth and zucchini into a blender.
    Add avocado, oregano, thyme, and garlic.
    Blend until ultra-smooth and creamy.

  • Serve:
    Pour into bowls and top with pumpkin seeds for crunch.
