Marbled Rose Chai Gut-Healing Jello Bites

These beautiful marbled bites are crafted with marshmallow root tea, gelatin, and warming chai spices for a uniquely gut-healing, skin-loving, hormone-friendly treat. Naturally sweetened with maple syrup and boosted by egg white proteins, they’re a fun, sliceable snack that feels like a marshmallow-meets-jello hybrid…perfect for postpartum recovery, toddler treats, or just a glow-up snack.
Ingredients (Makes ~20)
1¼ cups total water, divided
2 tbsp dried marshmallow root
5 tbsp gelatin
1 cup maple syrup
5 egg whites
1 tsp vanilla extract
Pinch of sea salt
¼ tsp cinnamon
⅛ tsp nutmeg
Instructions
Make the marshmallow root tea
Combine 2 tbsp dried marshmallow root with ¾ cup boiling water.
Steep 10-15 minutes, then strain well, pressing the herbs to extract all liquid.
Bloom the gelatin
Sprinkle 5 tbsp gelatin evenly over the warm marshmallow tea.
Let sit 5-10 minutes to bloom.
Stir gently after it thickens.
Cook the maple syrup mixture
In a small saucepan, combine:
1 cup maple syrup
½ cup water
1 tsp vanilla, pinch sea salt
¼ tsp cinnamon
⅛ tsp nutmeg
Bring to a boil over medium heat.
Simmer 8-10 minutes (don’t stir) until you see large slow bubbles (soft-ball stage).
Mix gelatin & syrup
Carefully pour the hot syrup into the bloomed gelatin.
Stir until fully dissolved.
Gently whisk the egg whites
In a separate bowl, lightly whisk 5 egg whites + pinch sea salt just until frothy
Combine
Slowly pour the hot gelatin-syrup into the egg whites while gently stirring by hand.
Stir until evenly combined into a pourable liquid (don’t whip to fluff….unless you want more of a marshmallow vibe).
Pour & set
Pour into a parchment-lined pan.
Use a toothpick or spoon to swirl for a marbled effect.
Chill in the fridge for at least 2 hours, until firm.
Slice & finish
Cut into squares.
Optional: dust lightly with cinnamon or rose petals
