Made with your own homemade almond butter and a fresh strawberry-raspberry-spinach jam, these crustless sandwiches are toddler-approved, freezer-friendly, and perfect for healthy lunches or snacks…no processed sugars or fillers.
For the Sandwiches
Soft sandwich bread (whole wheat, sourdough, GF, or sprouted)
Homemade almond butter (recipe below if making yourself…or use store bought)
Homemade strawberry-raspberry-spinach jam (recipe below)
How to Make Homemade Almond Butter
Ingredients:
2 cups raw almonds (or roasted if you want a toastier flavor)
Optional: pinch of salt or cinnamon
Directions:
Preheat oven to 350°F. Spread almonds on a baking sheet and toast 8-10 minutes if using raw (skip if pre-roasted).
Place warm almonds into a food processor.
Blend, stopping to scrape down sides as needed. It will first look crumbly, then form a thick paste, then turn smooth and creamy (takes 8-12 minutes total).
Add a pinch of salt or cinnamon if desired.
Store in a sealed jar at room temp for 1 week or in the fridge for 1 month.
How to Make Homemade Strawberry-Raspberry-Spinach Jam
Ingredients:
1 cup strawberries, chopped
½ cup raspberries
½ cup packed fresh spinach leaves
2 tbsp water
1-2 tbsp chia seeds (for thickening, optional)
Directions:
In a small saucepan over medium heat, add berries, spinach, and water.
Simmer 5-7 minutes, stirring and lightly mashing, until berries break down and spinach wilts.
Remove from heat, stir in chia seeds if using.
Let cool and thicken for 10 minutes. Put in blender for smoother texture
Store in a jar in the fridge for up to 1 week.
How to Assemble the Sandwiches
Lay bread slices on a cutting board.
Spread a thin layer of almond butter on both slices (keeps jam from soaking in).
Add a spoonful of jam to the center of one slice.
Place other slice on top.
Cut & seal with a sandwich sealer, biscuit cutter + fork, or mason jar + fork.
Freezing & Serving
Wrap each sandwich tightly in parchment or plastic.
Store in a freezer bag for up to 2 months.
Thaw 30-60 min at room temp or overnight in the fridge.
